To make the Spiced Raspberry Preserves: In a bowl, whisk ingredients together. If not using immediately, refrigerate until ready to use. Makes just over ¼ cup.
To assemble the sandwich: (bread, cheese, preserves, ham, preserves, cheese, bread) Lightly spread butter on each slice of bread, only on one side. Place one slice of bread, butter side down on a piece of parchment paper (or wax paper). Top with 2 slices of Swiss cheese, then spoon a little of the Spiced Raspberry Preserves on top of the cheese. Next, arrange the slices of ham, top the ham with more spiced Raspberry Preserves, and then place last 2 slices of Swiss cheese on top. Place the second slice of bread, butter side up, on top of the sandwich.
Pre-heat skillet on medium to medium high heat. Add approximately ½ tbs. of butter into the hot skillet. Once butter has melted, place the sandwich in the pan. Cook each side for about 2-3 minutes or until sandwich is golden brown. Cut in half and serve with the remaining Spiced Raspberry Preserves for dipping. Makes 1 sandwich.
