Cook diced bacon in large sauté pan (or large sauce pan) over medium high heat, until just crispy. Add diced onions to the bacon (do not drain bacon fat) and sauté for about 2-3 minutes or until tender and translucent. Drain some of the excess liquid off each can of pinto beans, (do not rinse the beans) and add to the cooked bacon and onions. Then add the tomato sauce and the Mezclajete® Especial Salsa Picante Hot Sauce. Mix until everything is well blended. Lower heat to simmer and cover for 15-20 minutes, stirring occasionally. Makes 8 servings.
*If you want to omit the bacon, use 2 tbs. of oil to sauté the onions.
Great in a Burrito Bowl or in a Taco Salad. Makes a tasty Bean and Cheese Burrito. These beans also taste great the next day and the leftovers freeze well.
